Greetings from
the Delgado - Solano
Family!
Welcome toPura Vida
Restaurant of Estes
Park
...Authentic Costa
Rican Cuisine!
Pura Vida (POO-rah
VEE-dah), used by
Costa Ricans since
1956, literally
translated means "Pure
Life."
Contextually, it
means "Full of
Life," "Purified
life," "This
is living!" or "Going
great!" It
is used mainly as a
greeting, as a
farewell, or to
express
satisfaction.
I'm Carlos
Delgado, Pura Vida
Chef. We're a family
who've been in the
food business over
30 years. For
nearly 20 years, I
worked in Costa
Rican restaurants,
including one of our
own in Monteverde, Costa
Rica.
In addition to
operating our
restaurant, I also
worked for the Town
of Monteverde, and
as the town was
searching for a "sister
city," we
discovered Estes
Park. So
we traveled here at
first as part of
Monteverde Town
Committee,
officially beginning
the partnership with
Estes Park as
"sister cities."
My family and I fell
in love with this
marvelous town,
which is similar to
Monteverde in that
it's also a tourist
destination.
We decided to make
the move from Costa
Rica in 2008, and
opened Pura Vida to
share our wonderful
Costa Rican recipes
with the people of
Estes Park and its
many visitors.
Pura Vida is
all of us — myself,
my wife Elieth,
and my kids (who are
not so little any
more) Rebecca, Josue, Karla, and Carlitos.
We brought a taste
of Costa Rica with
us, and we invite
you to enjoy
authentic Costa
Rican food, music
and culture at Estes
Park's own Pura
Vida Restaurant —
THIS IS LIVING!
